The one downside of having a campsite is that someone somewhere on the site is always cooking bacon. Bacon sandwiches are perfect camping food, but I guess it isn’t good to eat them everyday. Every now and again I can’t resist the tantalizing smell and I make them for lunch. We don’t have any lettuce or tomato at the moment so we can’t have a BLT. We do however, have lots of eggs and we also buy avocados so I made an ABE sandwich – avocado, bacon, egg (I will never be able to give up lemons, bananas or avocados and we will never be able to grow them!). The egg is very large here as it is one of our special, super-delicious turkey eggs – they are now laying again and we hope they will sit and hatch out some more super-cute turkeys.
Sometimes there is no bread in the house – or rather the bread is still cooking in the bread machine so then I make an ABE salad. Here I piled up some little gem and spring onions (from my friends Margo and Bob), half an avocado, two rashers of bacon, and a fried turkey egg. I then deglazed the pan with balsamic vinegar and added in a little hedgerow jelly to make a fruity dressing for the salad – delicious.
N.B. we are hoping to start curing our own bacon this autumn and, if all goes well, we will sell it at the farm-gate
