It is cold, the cucumbers and tomatoes have pretty much finished so it is now time for soup. This recipe was very loosely inspired by Moro East – I can’t find the cookbook now so can’t give the page number!
Celery soup: one head of celery, couple of carrots, onion, couple of cloves of garlic, 1 tsp caraway seeds, juice of a lemon, lemon oil, chilli flakes, water, very large handful of chopped tomatoes (or a tin), tin of white beans.
Chop up the celery, carrots and onion and fry gently with the garlic. Add the caraway seeds. When they are soft add the tomatoes and water and cook a little more. Add in the beans and cook some more. I liquidised some of it to give a smooth base. Serve with lots of lemon juice stirred in, lemon oil drizzled over the top and chilli flakes. Yoghurt would be nice and you could also add in parsley.
