We are busy eating cauliflowers as they have all reached their peak together. I found this recipe on the Kitchn website – see here
I made some sausage meat from minced pork at the weekend and needed to use it up. The sausage meat was for sausage rolls with home-made lard pastry – they were delicious, but the pastry was so flakey it kept collapsing – I will try again and the post about them. Anyway, I had a bit of sausage meat and some cauliflower so I tried this out. It was lovely and would be equally lovely without the pork which is how we will have it in future I think.
Cauliflower and sausage bake: 1 cauliflower, some sausage meat, handful of tomatoes (or a tin), breadcrumbs, Parmesan, onion (I had added onion to my sausage meat + lemon zest, thyme etc so didn’t use any extra).
Cook the cauliflower florets for a few minutes, drain and cool under cold water. Fry the onion (if using) and sausage meat in a frying pan. Add in the tomato and any other herbs or garlic etc. Cook until it looks like a sauce. Put the cauliflower in a baking dish, pour sauce on top. Sprinkle over cheese and breadcrumbs and bake until golden brown. We ate it with chutney.
