We haven’t had the internet for days and days and days. Meanwhile I have set myself a challenge. I am going to work my way in order through this cookbook and try out all the recipes.

Jeff and Kerry (and Jude and Holly) gave me the book for my birthday and I thought it would be a good way to spend the winter. I can’t really work my way though other cookbooks as we eat seasonally from our garden and very few cookbooks have a massive chapter on Swiss chard or cabbage!

Mixed Nut Shorties with Chocolate: a version of the Pecan Shorties p.14 – we didn’t have any pecans and I wanted it to be gluten-free – I never said I would follow the recipe exactly! Ingredients: 75g mixed nuts – whatever you have to hand; 250g gluten-free flour (or plain flour if that is what you have); 175g butter – softened; 85g icing sugar; 1/2 tsp vanilla extract; dark chocolate (Montazuma – thank you Anne and Bruce).

Heat the oven to 180C.  Toast the nuts until brown – don’t burn them (duh!) and then chop. Beat the butter in a mixer for ages and ages until it resembles mayonnaise. Beat in the icing sugar one spoonful at a time. Add the vanilla and beat for ages more until white, light and fluffy. Add the flour and nuts and stir to make a firm dough. Put small balls of mix on a lined baking tray. Flatten to make a disk and bake for 15 minutes until pale gold. Let them cool on the baking tray for 5 mins then transfer to a wire rack. Once the biscuits are cold, melt the chocolate in a bowl above a saucepan with a little simmering water in. Dip one side of the biscuits in the chocolate – when you get tired of burning your fingers this way use a spoon to trickle the chocolate on one side of the buscuit – we chose the underneath side. Leave the chocolate to set, then eat or try adn keep them in a biscuit tin – good luck they are very more-ish!
