We have eaten all our squash – I miss squash – but we had some nice dinners. The easiest one was from Nigel Slater The Kitchen Diaries II (440). He used pumpkin, but I used squash.
Squash Pie: puff pastry, squash, butter, cinnamon, salt, oil, beaten egg. Roast the squash in a pan with butter, some oil and cinnamon. When it is done mash it and season it. Roll out some puff pastry, put the squash in the middle, brush the edges with some egg to seal and fold into a parcel. Cook in an oven until golden brown and puffed up.
It isn’t really a recipe is it? But it is good and it is lovely cold the next day too.
