We have a lot of courgettes and consequently a lot of courgette flowers so I made stuffed courgettes. Life is not too short to stuff a courgette – in fact this might be the actual meaning of life – but I digress…..
Stuffed Courgette Flowers: courgette flowers, cream cheese, ricotta or labneh – I used home made labneh this time as that is what I had in the fridge – lemon zest, basil, parmesan, breadcrumbs, egg, flour.
Here is my lovely labneh – I will write more on this at another time.
Mix the labneh (or cream cheese) with the lemon zest, basil and parmesan. Season, if you want, add a beaten egg, if you want.
Shallow fry in a little oil (who am I kidding – fry in a significant, but not a lot of oil) and then serve with home-made tomato sauce. As we have a LOT of courgettes I also served them with extra roasted courgettes with lemon juice on top.
N.B. Next I am going to try courgette flower tempura, but I might need to clean out my deep fat fryer for that one.
