My mum’s friend Carole used to make us this soup when we visited before Christmas. I have always liked it and as I am currently obsessively collecting chestnuts whenever I go on a walk with the dog, I thought I should do something with them.
Chestnut and Lentil Soup: chestnuts, red lentils, onion, celery, carrots, stock (vegetable or chicken)
First peel the chestnuts. Make a cut in each one, wash in water, put in a bowla nd microwave for 1 minute. It is then possible to peel them.
Gently fry the onion, celery and carrot in some olive oil. Add in a few handfuls of red lentils and the stock. Cook for a while. Then add in the chestnuts and cook until done. Liquidise the soup and season. Serve with a blob of thick yogurt.
