Chestnut and Lentil Soup

soup in panMy mum’s friend Carole used to make us this soup when we visited before Christmas. I have always liked it and as I am currently obsessively collecting chestnuts whenever I go on a walk with the dog, I thought I should do something with them.

Chestnut and Lentil Soup: chestnuts, red lentils, onion, celery, carrots, stock (vegetable or chicken)

First peel the chestnuts. Make a cut in each one, wash in water, put in a bowla nd microwave for 1 minute. It is then possible to peel them.

Gently fry the onion, celery and carrot in some olive oil. Add in a few handfuls of red lentils and the stock. Cook for a while. Then add in the chestnuts and cook until done. Liquidise the soup and season. Serve with a blob of thick yogurt.

    We’ve had Chestnut and Chickpea soup in Italy and Chestnut and Chorizo soup in Spain, both of which remind me sooo much of this time of year.
