I thought my muffin recipe was pretty good and then I tried my sister’s muffins. Her muffins are brilliant. She gave me the recipe, it is from an old book from the 1970s (when colour was invented) that my mum gave her. It is a recipe for plain muffins to which you can add fruit, if you want. I add more fruit than the recipe says but then I want to eat these muffins for breakfast and I need to be able to convince myself they are healthy.
You need big muffin tins for these. It think it is the massive amount of baking powder that does the trick with these. Sometimes I use self-raising flour and a bit less baking powder, sometimes I use plain flour. If I wasn’t so busy and was a bit more focused I would undertake a careful study of the results, but I haven’t … the muffins always get eaten so they must be fine.
Apple and Cinnamon Muffins: 8oz flour 4oz sugar; 1tbs baking powder; ½ tsp salt; 1 egg; 225ml (8 fl oz) milk; 50ml (2fl oz) oil, 1tsp of cinnamon; 3 medium cooking apples, peeled, cored and diced.
Mix together the dry ingredients.
Add in the apple. Mix together the milk, egg and oil. Add in, stir.
Put into greased muffin or yorkshire pudding pans.
Cook at 200C for 20-25 minutes. Makes 6 …. so you might as well double the recipe and make 12.
Six muffins don’t last long in our house.
