Suddenly there are lots of radishes – and not all of them have been nibbled by other creatures.
In addition to just shoveling them into my mouth I have been making a radish, spring onion and yoghurt salad.
This is quick and easy and we have been eating it with lots of different things – roasted rack of lamb, pan-fried chicken and especially with lovely borek made with some of the first spinach and home-made ricotta and with the first rocket of the season.
Radish and Spring Onion with Yoghurt: radishes, spring onions, mint or dill, yoghurt seasoning, dash of olive oil, splash of white wine vinegar.
Slie radishes and spring onions. Mix with yoghurt and herbs of your choice. Season with salt and pepepr and add a little olive oil and vinegar to taste.
