I got out of the routine of blogging for a bit – turns out setting up and running a cafe cooking all the cakes and food for it and growing the food, as well as juggling an academic job is quite tricky.
I will post a few little posts about stuff I have eaten and or grown and work up to some slightly longer ones as then it won’t seem so overwhelming.
The first potatoes from the polytunnel of dreams are ready as are bunches and bunches of radishes. It is potato salad time.
It ever ceases to amaze me how there is always something, and generally many things, to eat from the garden Each year I think we won’t have anything left or there won’t be anything growing in the winter and especially in spring/early summer and each year I am surprised. Just as the cabbages, leeks and broccoli finish we have radishes, onions, salad greens (and now courgettes and peas). There is always enough for dinner which is good.
Potato Salad: new potatoes, radishes, dill, gherkins, rocket, mayonnaise, yoghurt – you could add finely chopped onion too.
Boil the potatoes and cut into sections. Slice the gherkins and radishes. Mix the yoghurt with the mayonnaise (to taste) and season. I added a splash of gherkin-y vinegar as well. Chop the dill. Add the potato, radish gherkins and dill to the mayonnaise and mix. Serve on rocket.
We had it with grilled salmon. I am trying to eat a bit of oily fish as it is meant to be good for joints although to be fair I might well be past that stage now.
